Let's Talk About Soup: Lemon Chicken Orzo Soup and Rose Byrne's Jumpsuit


I indulged a whole lot these past few days (filets, rib roast, venison, cheeses, brownies, good wine, good beer, loaded baked potatoes....) so needless to say, on Sunday, I was seriously craving  a good bowl of soup. I have never made Greek Chicken Lemon soup before, but I was inspired by the bright lemons sitting on my counter top, and the wonderful sunshine on this brisk day (Speaking of the weather. What. The. Hell. These mid-60 degree days we have had the majority of January is not my favorite. I have sweaters to wear. Really nice ones.)

So I googled Greek Chicken Lemon soup and found lots of recipes for Greek Avgolemono soup, which is delicious, but also has a lot of eggs, and that is not what I intended.

Finally found one from my good friend Giada de Laurentiis: Lemon Chicken Soup with Spaghetti, courtesy of http://www.foodnetwork.com/

I did make some modifications (mine are in red below) , but here is the basic recipe:
  • 6 cups low-sodium chicken broth
  • 1/3 cup fresh lemon juice (about 2 lemons) I used 2 1/2, and zested the skin of one lemon.
  • 1 dried bay leaf
  • 1 (2-inch) piece Parmesan Cheese rind, optional. This is not optional. this is mandatory. Use it in all soups. It adds.....something I can't quite put my finger on, but use it.
  • 2 medium carrots, peeled and sliced into 1/4-inch pieces
  • 1 cup (about 2 1/2 ounces) spaghetti, broken into 2-inch pieces, *see Cook's Note I used Orzo, about 3/4 cup. It will "grow" in the broth, so you don't need a ton.
  • 2 cups diced cooked rotisserie chicken, preferably breast meat . I pan seared about 8 chicken tenders, and then roughly diced them.
  • 1 cup grated Parmesan Cheese.
  • Kosher Salt
  • One teaspoon of dried thyme.
  • One shallot
  • One can of diced tomatoes, rinsed and drained.
Directions:

Pan-sear chicken tenders in stock pot until cooked through, remove to a platter. Add sliced shallot and olive oil and "deglaze" pan. The proceed with rest of recipe.
In a large stockpot, bring the chicken broth, lemon juice, bay leaf, and Parmesan rind to a boil over medium-high heat.
Add the carrots and simmer until tender, about 5 to 8 minutes. Add tomatoes.
Add the broken pasta and cook until the pasta is tender, for 4 to 5 minutes, stirring occasionally. Add the chicken and heat through, about 2 to 3 minutes. Remove the bay leaf and the Parmesan rind and discard. Stir in 1/2 of the cheese and the parsley. Season with salt, to taste. Ladle the soup into serving bowls and sprinkle with the remaining cheese.

It was delicious and very simple! Boyfirend loved it.  It took about 30 minutes, including cooking the chicken, and a bit of slicing, dicing, and juicing! Plenty of time to get some work done and by work I mean watching the  E! network Red Carpet pre-show of the Screen Actor's Guild Awards. I am totally digging Rose Byrne's Elie Saab jumpsuit. She looks effing awesome.

A Dollar make me Holla', or, I am Really into the Color Green


I really wanted to talk to you about my favorite color this past weekend, green, but I thought if I just titled this post "I like Green", y'all would ignore it so I decided to talk like a stripper instead.
Anywhos, here are my favorite green things from this weekend.

Starting with these fantastic eggs!

I have an egg-man now. His name is Chris* and he has a chicken coop in his backyard, complete with a breed of chickens that make these beautiful pastel green eggs. The yolks are yellow, not green and they make the best scrambled eggs. They do not come with ham. The name of the breed is the Auracana chicken.

Friday night, Boyfriend and I had dinner at one of our favorite restaurants, Satterfield's, and Chef Haller Magee had one of these crazy outer space Romanesco Cauliflower thingys hanging out in the kitchen. I actually took a picture of an alien walking out from behind one of these, but it didn't show up on my camera. For Realz, y'all. An Alien.



And my favorite green thing. See this dress? It is a lovely green that caught my eye as I was walking out of a little boutique here in Birmingham called Leah's. You can't see the price tag, which is a shame because it was normally $158 and I got it on sale for $10. It is an ABS Schwartz. If you see me in this dress, you will not hurt my feelings by mentioning that it only cost $10.

Doing a little web-surfing, checking out HGTV.com (a daily habit), and I spotted a link labeled "Kitchen Island Dog Bed", and of course I clicked on it, because when, just when, I ask you, have you ever seen those four words together?

NOLA 2012

Because I know what y'all are begging to know what we did in NOLA this past weekend....
I show my pictures.

We toured the Lafayette Cemetery. It was awesome.




We got stuck in traffic jam because of a high school band parading down the street. Because it's New Orleans, it was awesome.




I wore a sequined skirt the size of a postage stamp to John Besh's restaurant, August. Boyfriend thought it was really awesome.







At August, we opened up a bottle of 2000 Dujac Clos de la Roche, wedding gift from Uncle Ben. For those who aren't familiar with Dujac, this is hella awesome.






We ate cheeseburgers at the Camellia Grill. Since I allow myself 3 Cheeseburgers a year, you know this one had to be ultra-awesome.




Also, at August, we shared our Dujac with the sommelier, Erin White, who in turn shared Pingus Psi and Baumard Quarts des Charmes. It was a lovely experience. Sharing is awesome.






We made our first stop at Butcher and got lunch, which is always our first stop pulling into NOLA. This is what was left of a Cubano with housemade chips, Cole Slaw and Mac n Cheese with Cilantro Breadcrumbs. Not awesome? Attacking my turkey sandwich without taking a picture.

"Watch"-a doin'?

I went on a "Shopping Fast" in December.
Well, I bought Christmas presents, but I did not buy anything for myself!
You have no idea how difficult this is for me. Say, I buy my sister a scarf, and I really like it, and oh and look! they have it in another color, and it's 20% off if I buy two, so this is God telling me to buy this scarf, obviously! All in the spirit of giving!

But I refrained, completely*.

Until January First 2012, and then I made my very first Ideeli purchase.

This lovely Akribos men's Coronis Chronograph watch in Rose Gold.







And it came in this lovely box, with papers! Like a purebred puppy or an Hermes Birkin!
It was only $87 with tax and shipping! Regularly $625!!!!
Patience has its virtues, I tell ya.


* Full disclosure, I started having super insane shopping withdrawals around December 30th so I went to TJMaxx ('cuz you get Max for the Minimum there) and picked up a lovely taupe colored cashmere Cynthia Rowley sweater because I wanted, no needed, to buy something, but it didn't fit, the color washed me out, etc. So I took it back. But wait, there's more!
It was the same price as the watch, so the watch won.

HAHA New Year's Resolutions WHAT?

Here is a short run-down of my New Year's Resolutions:
Eat better, drink less booze, eat less meat, eat less cheese, eat fewer carbs, eat more greens, lose 5 pounds by February....snoooze.....boring....blahh....
They may even sound familiar, because you created these same "New Year, New Me!" guidelines.

And so here is how I start my New Year's:
Campanelli alla Carbonara. With really good pancetta. And cheese. And a bottle of Argiolas Perdera from Sardinia. This is no Weight Watcher's Recipe.
There's parsley on it....does that count as a green...?



Very Basic Campanelli alla Carbonara Recipe:
Cook 4-5 slices of pancetta in large pan, when it gets kinda crispy, add a coarsely chopped shallot.
Start boiling heavily salted water (You want it taste like the Dead Sea. I am not kidding, it is an ancient pasta secret. A gazillion Sicilian women can't be wrong.)
In a separate bowl, whisk 3 large eggs with 1/2 cup of finely grated Parmesan Cheese, some salt and pepper.
Drain pasta (reserve a little of the liquid, you may need it thin out the dish at the end).
Dump pasta into frying pan with pancetta and shallots. On a medium heat, stir pasta and pancetta. When it is coated, add egg and cheese mixture. If neccesary, add some of the reserved pasta liquid to thin it out a bit.
Stir to coat and serve immediately with a sprinkle of parsley.
Make a salad if you feel like the parsley is too meager to save your soul.
Pour wine in glasses. Watch husband's eyes roll back into his head. Then announce, "Tomorrow, we are going on a kale/lemon/strawberry smoothie cleanse, dude."

New Year's Eve. Go the Hell Away 2011








It was a pretty good year.


I went to 3 "I" places: Italy, Ireland and Iowa. Guess which one had fried pork sandwiches made by the World Famous "George the Chili King".


Also had a visit from a crazy tornado, and no I'm not talking about the Smig.



We hung curtains, and our neighbors are SO happy that don't have to watch us walk around naked any longer.


I got a new car. Boyfriend got my old car. He is saving up for a Big-Ass Man Truck, so hopefully the Escape will make it for a little while.




To say good by to 2011, we threw our ultra-awesome Boyfriend and Princess Pretty Face NYE party! Fun was had by all.


I only have this one picture that looks okay. A 2012 Resolution will be to take better pictures since I am taking this blog very very seriously. For Realz.
